Pearl Perch
As an edible fish the Pearl Perch is in the high-test class of all Australian fishes - its flesh is beautifully white; it is always tender and has a delicate flavour. It has received its name from the pearly lustre of a prominent bone above the pectoral fin which is life is covered by a dark and delicate skin easily rubbed off. It is nowhere abundant - leaving a very restricted range of the East Australian coast. What a pity it is not more common.
