Scallops are refined, delicate, versatile and more-ish little shellfish -so smart and pretty when they are all cleaned up. There are so many different gourmet dishes that can be made with scallops that once you know a little about them, cooking with them is, to quote my favourite saying, 'Just a breeze"-like that beautiful nor'-easter that floats across Sydney Harbour on a hot summer's day. Very easy to take (the breeze and the scallops). Scallops can be tough if overcooked, so take care.
